Wild-caught in the Chaoshan fishing grounds and landed straight off the boats, then gutted, cleaned and frozen. The flesh is fine and tender with very few small bones, so it holds together when steamed or pan-fried. A clean, mild sweetness that takes well to ginger, spring onion and a splash of soy.
